Tasty Tortiere recipe needed
I really have a hankering for a tortiere, we used to buy frozen home made ones from the gas station here ( sounds horrible i know, but there was a restaurant attached) but now there are new owners and nothing is the same.:sad:
I have never made one of my own, and every recipe i have found so far is kinda bland looking. Need some great tasting ideas.... HELP PLEASE!!!!

mmm i looove tourtières! so easy to make too...
better if you make your own pie crust but if you have no time, premade ones are OK. here is a nice, basic recipe... you can go half porc and half beef, or one third each of porc, beef and veal... all yummy! have fun! 1 1/2 lb. ground lean pork 1 sm. onion, minced 1/2 c. boiling water 1 clove garlic, chopped 1/4 tsp. ground cinnamon Pinch of ground cloves 1/4 tsp. celery salt 1/4 tsp. black pepper 1/4 tsp. sage 1 1/8 tsp. salt 1. In a heavy 3 quart saucepan, saute meat and onion. Drain. Return to pan. Add remaining ingredients. Cover and cook about 45 minutes or until about half the liquid has evaporated. Add 3 medium sized potatoes cooked and mashed or 1 cup instant potatoes to cooked meat mixture. Cool. 2. Preheat oven to 450 degrees. 3. Prepare two-crust pastry. Roll out half and line a deep 9 inch pie plate. Fill with cooled meat mixture. Roll out remainder of dough and cover pie. Flute and seal edges; slash top crust. 4. Bake in preheated 450 degree oven for 10 minutes. Reduce heat to 350 degrees and continue baking 30-40 minutes longer. May be made ahead and frozen.

The recipe that we have at work is like that but we add a little mashed potato to it, you can also use venison or other wild meat in it as well to make a change.

mmmm now i'm hungry... served juicy crispy hot with nice cold ketchup...

I add potatoes to mine too and do the 1/2 pork - 1/2 beef!

Use 1/2 lb each of beef, veal and pork. It has a much better taste. Also, can use bread crumbs to thicken a bit so that your pastry doesn't get mushy on the bottom during cooking.
