HOT weather Recipes!

What are your fave things for hot days. Here I think it's even to hot to crank up the barbeque, although I don't have a tank right now so that's out. too broke to get one.

I like the old standbys, macaroni salad, couscous salad, think I'll make some for today. Potato salad. I have fresh green beans to blanche. Devilled eggs..should make some of those. I made a fajita/taco salad last night for dinner, might just cook up some more ground chicky and make another one, it was really good.

Got some really nice leaf lettuce and made a very simple dressing, you take brown sugar and apple cider vinegar and that's it. You can make it as sweet or tangy as you want. Got some teeny potatoes for salad, they won't take long to cook.

Anybody else got hot weather faves?

You have a pretty good list there. I can't think of any others. Somehow there is nothing like salads and coldcuts on a hot day. Taco salad has got to be one of my favourite things.

The neighbors invited me over to pick raspberries yesterday. They have a bumper crop of them this year and I came home with over a gallon! Wasn't sure what I'd do with them all, but I found my new favorite hot-weather dessert--Raspberry Freezes! I filled ice cube trays with fresh raspberries, then poured just enough water in each well to dampen the fruit. Froze 'em, et voila! Raspberry Freezes.

You can add sugar or other sweetener if you want, but I like mine plain. And if you want a slightly larger portion, you can partially fill muffin tins and freeze the same way. When frozen, loosen by setting the bottom of the tin in about a half-inch of warm water, pop out the fruit and store in a container in the freezer.

Will the raspberries freeze if you pour sangria on them?? Then I may have a new favourite!

Who's got a good recipe for non-alchoholic punch? I have to make some for my BBQ this weekend.

Oh I like the sound of that..you could make like a Sangria/raspberry slushie!!

Non-alcoholic, not off hand, check out www.allrecipes.com I love that site. I like the by ingredient search function

Cool, I really like that site. It's very handy when searching for different stuff. Found a really good fresh green bean recipe yesterday that came out really yummy. It's easier than searching through a ton of cookbooks!

Make a grilled chicken caesar salad - buy the chicken strips already cooked in the meat section - romaine, roma tomatoes, cukes, shredded cheese, caesar dressing and or home made ranch dressing.
Your can season the meat and nuke it for a minute or 2 and add to the salad.
It's my summer meal on hot days - but I usually marinade and grill a pkg of chicken breasts and store in the fridge or freezer until I'm ready to use.

I remember last summer it was SO hot, the BBQ thermometer made it look like the BBQ was on, when the tank wasn't even attached! When it's hot we don't eat big meals, I know for me, it makes me feel sick. And since using the A/C in the RV blows the breaker, we filled Sparky's kiddy-pool (but it has a bone shape in it!) and sat with out feet in it, eating crakers/pumperknickle and dip.

If you can hold off like that until it gets cooler, then actually cook would probably be ideal
