I like easy no bake cookies to bring to large events - or a strawberry sqaures made very easily.


Chewy Chocolate No-Bakes

1 cup (6 ounces) Semi-Sweet Chocolate Morsels
5 tablespoons margarine or butter
16 large marshmallows
1 teaspoon vanilla extract
2 cups QuakerŽ Oats (quick or old fashioned, uncooked)
1 cup (any combination of) raisins, diced dried mixed fruit, shredded coconut, miniature marshmallows or chopped nuts
In large saucepan melt chocolate morsels, margarine and large marshmallows over low heat, stirring until smooth. Remove from heat; cool slightly. Stir in vanilla. Stir in oats and remaining ingredients.
Drop by rounded teaspoonfuls onto waxed paper. Cover and refrigerate 2 to 3 hours. Let stand at room temperature about 15 minutes before serving. Store tightly covered in refrigerator.
Makes about 3 dozen.

Note: I prefer Quaker Oats but any oats will d - they just taste better with Quaker (imho!)

The strawberry squares are easily made by baking a graham wafer base (crumbled wafers and butter or ,argarine), heating in combo strawberry jello crystals and frozen strawberries (or even home made jam in a pinch). Keep some of the wafer/butter base to sprinkle over the top of the squares. Drop the jello mixture over the based. Top with whipped cream and the reserved wafer mix. Cool overnight. It's sinfully delish!!
